🧂 INGREDIENTS

  • 12 oz (340g) short pasta, like penne or rigatoni

  • 1 lb Italian sausage, casings removed

  • 2 tablespoons olive oil

  • 1 small onion, diced

  • 3 cloves garlic, minced

  • 8 oz (225g) mushrooms, sliced

  • 1 cup heavy cream

  • 1 cup chicken broth

  • 1 cup grated Parmesan cheese, divided

  • 1 cup shredded mozzarella cheese

  • 1 teaspoon dried oregano

  • 1 teaspoon dried thyme

  • Salt and black pepper, to taste

  • Âź cup fresh parsley, chopped (for garnish)
