Ingredients

1 fresh pineapple, peeled, cored, and chopped into bite-sized pieces

1 English cucumber, sliced into thin half-moons

⅓ cup roughly chopped fresh cilantro

Salt & freshly-ground black pepper, optional
Instructions

Prepare the pineapple: Remove the top and bottom, peel, core, and chop into roughly ½‑inch chunks.

Prepare the cucumber: Wash well, slice in half lengthwise, then into thin half-moons.

Add lime zest & juice: Zest the limes, then juice them and add both to the bowl with the pineapple and cucumber.

Mix in herbs and seasoning: Add the chopped cilantro. Gently toss everything together, then season with salt and pepper if desired.

Serve or chill: You can serve immediately, or cover and refrigerate until ready to eat. Flavors develop even more when chilled.
