Here’s a basic version of Confetti Salad. Feel free to tweak it based on your taste or seasonal produce:

For the Salad:

  • 1 cup corn kernels (fresh, canned, or frozen and thawed)
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 small cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro or parsley, chopped
  • 1 can black beans, drained and rinsed (optional for added protein)

For the Dressing:

  • 3 tablespoons olive oil
  • 2 tablespoons fresh lime juice (or lemon juice)
  • 1 teaspoon honey or maple syrup
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • Optional: 1/2 teaspoon ground cumin or chili powder for a kick

  1. Prep the Veggies
    Chop all your vegetables into small, even pieces. The finer the chop, the more “confetti-like” your salad will appear.
