🛒 Ingredients
Here’s a basic version of Confetti Salad. Feel free to tweak it based on your taste or seasonal produce:
For the Salad:
- 1 cup corn kernels (fresh, canned, or frozen and thawed)
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 small cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro or parsley, chopped
- 1 can black beans, drained and rinsed (optional for added protein)
For the Dressing:
- 3 tablespoons olive oil
- 2 tablespoons fresh lime juice (or lemon juice)
- 1 teaspoon honey or maple syrup
- 1 clove garlic, minced
- Salt and pepper to taste
- Optional: 1/2 teaspoon ground cumin or chili powder for a kick
🥄 Instructions
- Prep the Veggies
Chop all your vegetables into small, even pieces. The finer the chop, the more “confetti-like” your salad will appear. - Mix the Dressing
In a small bowl or jar, whisk together the olive oil, lime juice, honey, garlic, and seasonings. - Combine
In a large salad bowl, toss all the chopped vegetables (and beans, if using) together. - Dress It Up
Pour the dressing over the salad and toss gently until everything is well coated. - Chill & Serve
For best flavor, cover and refrigerate for at least 30 minutes before serving. Garnish with extra herbs or a squeeze of lime, if desired. -
