Creamy and Loaded Cheesy Potato Bacon Soup

– **6 slices of bacon**, chopped
– **1 small onion**, diced
– **3 cloves garlic**, minced
– **3 tablespoons butter**
– **1/4 cup all-purpose flour**
– **4 cups chicken broth**
– **2 cups milk** (whole milk or 2% preferred)
– **1 cup heavy cream**
– **4 cups potatoes**, peeled and diced (Yukon Gold or Russet work great)
– **2 cups sharp cheddar cheese**, shredded
– **Salt and black pepper**, to taste
– **1/2 teaspoon smoked paprika** (optional, but adds depth)
– **Green onions, extra bacon, sour cream**, and **more cheese** for topping
