Pickle and Bacon Cheeseburger Meatloaf

Step 1: Preheat the Oven
Preheat your oven to 350°F (175°C) and prepare a loaf pan by lightly greasing it or lining it with parchment paper for easier removal.

Step 2: Mix the Meatloaf Ingredients
In a large mixing bowl, combine the ground beef, breadcrumbs, milk, ketchup, pickle relish, chopped bacon, shredded cheddar cheese, egg, garlic powder, onion powder, Worcestershire sauce, salt, and pepper. Use your hands or a spoon to mix until just combined—be careful not to overmix, as this can make the meatloaf dense.

Step 3: Shape the Meatloaf
Transfer the mixture to the prepared loaf pan, shaping it into a loaf. You can also form it freehand on a baking sheet if you prefer a crustier exterior.

Step 4: Prepare the Topping
In a small bowl, mix together the ketchup, brown sugar, and mustard. Spread this mixture evenly over the top of the meatloaf.

Step 5: Bake
Place the meatloaf in the preheated oven and bake for about 1 hour or until the internal temperature reaches 160°F (70°C). For extra flavor, you can baste the meatloaf with the drippings halfway through cooking.

Step 6: Let it Rest
Once cooked, remove the meatloaf from the oven and let it rest for about 10-15 minutes. This allows the juices to redistribute, ensuring a moist and flavorful meatloaf.
